Cooperage Hawk rises above the ca-CAWK-phony of the barrel-aged beer scene with a complex malt bill that melds beautifully with the spicy character of the unique maple barrels we aged it in. The body is roasty, with a hint of caramel and figgy sweetness balanced by a dry, woody finish. We added vanilla to round out that tannic dryness and add a depth to the aroma. Our pal from Horus Aged Ales in Oceanside, CA came to brew this delight with us last year, and it is named in his style: after a bird of prey. We chose to give a nod to the cooperages in KY and a bird native here and that often seems to be offering the lesson of getting some perspective: Cooper’s Hawk. May it help you soar!
