Que Saudade!
Thank God we’ve got this tasty treat as a momento of our dear friends! We brewed this beer in collaboration with Andre from Morada down in Curitiba. He brought his pal Tim from Brewstel over in West Virginia and we decided to go for a full house and invited Noah from Dark Matter Roastery in Chicago. The malt bill is oat heavy to provide a rich backbone for an otherwise dry saison. The only hop addition was made at 30 minutes and meant to bitter slightly and give a nice orangey base upon which the addition of 3 pounds of orange peel builds a luscious fruitiness. 20 gallons of cold brew add an intense coffee flavor and aroma that rounds out this very complex brew and adds a balanced bitterness. A great example of great minds melding into ultimate greatness.
